Fix it & Forget it Friday:Beef Tips in gravy

Beef Tips in Gravy

1 package of beef stew meat 
1 can of cream of mushroom soup
1 package of brown gravy mix
1 medium onion
2 1/2 cups of beef stock
salt/pepper to taste
flour 
hamburger seasoning (as desired or other seasonings for beef)
3-4 TBSP cooking oil

Season the stew meat with salt/pepper and hamburger seasoning as desired.  Coat with flour and add to a hot skillet with a few tablespoons of cooking oil.  Cook on medium-high meat, tossing as needed, until the beef is browned.  Be careful not to over cook because you will be cooking the beef in the crockpot. When browned, drain the excess oil and add the meat to the crockpot.  (I needed to make two skillets of beef because there was too much for one time.)  

Chop the onion in rings then saute the onions until translucent in the same skillet, using the drippings as added flavor. You may need to add a little more oil.  Add to crockpot when they are done.  

Add the cream of gravy and the beef stock. Stir. Cover and cook on low for 6 hours or on high for 3 1/2 hours.  

Add the gravy packet to the crockpot by whisking it in the liquid in the crockpot.  Continue to cook for 1 hour on low or 30 minutes on high.  

Serve over rice or egg noodles!
