We had a lot of hotdogs left from Grace's Party so it's time for some casserole!!......
Corn Dog
Casserole
- 2 Tbsp. of butter
- 1 tsp. onion powder
- 1 1/2 lbs. of hot dogs, sliced/diced
- 2 eggs
- 1 1/2 cups milk
- 1/2 tsp. pepper
- 2 (8 oz.) boxes of Jiffy cornbread mix
- 2 cups shredded cheddar
- 1 cup diced celery (optional)
- 2 tsp. rubbed sage (optional)
Preheat oven to 400°. Melt butter
in a skillet. Saute hot dogs, celery, and onion powder until lightly browned.
Set aside 1 cup. In a large bowl, mix eggs, milk, sage, and pepper. Add
remaining hot dogs to the mixture. Stir in the 2 boxes of Jiffy mix and 1 1/2
cups of cheddar. Spray a 9"X13" dish with non-stick spray. Pour mixture into
the dish. Top with remaining hot dogs and cheese. Bake uncovered for 20-25
minutes. *Recipe can be easily cut in half and cooked in a 8"X8" dish.
