Getting the Kiddo's to  be Helpers:
If you have little ones, here’s how they can help (With close supervision, of course).
Get your kids involved in this one. No matter what their age, any child can help with a big pot of soup. Use your imagination and let them have fun. My little guy pretended the pieces of bell pepper were a choo-choo train, and “choo-choo’ed” them in one at a time. I was so busy with the rest of the ingredients, I didn’t even notice that it took him 20 minutes to get them all in there. But time isn’t the point. Getting the munchkins involved is the point. Have fun! make a game of it!

**Optional.
To make the Jicama Fiesta Salsa:

Adult: Shred the cabbage and slice the jicama as thinly as you can, using a mandoline if available.

Together: Place the shredded cabbage and sliced jicama together in a large mixing bowl. Add the orange slices, zest, onion, jalapeño if using, olive oil, tahini, pumpkin seeds, vinegar or lime juice, cilantro and agave nectar in a large bowl. Season with the salt and pepper to taste and cayenne pepper, if using. Chill in the refrigerator until the burgers are ready for assembly.
To make the Black Bean Burgers:
Adult: Preheat the oven to 375 degrees. Prepare a baking sheet with a light layer of vegetable shortening or nonstick cooking spray.
Together: Place the black beans, bread crumbs, mashed sweet potato, cilantro and onion together in a food processor or large bowl. Season the bean mixture with garlic powder, garlic, salt, pepper, olive oil, vinegar, lime juice and jalapeño, if using.
Together: If using a food processor, pulse the bean mixture together until all ingredients are well combined and evenly distributed. If using a bowl, mash the bean mixture together with a potato masher until well combined.
Kid: Shape the black bean mixture into 5 patties of equal sizes with your hands. Roll the unbaked black bean burger patties in additional breadcrumbs if you like your burgers crispy.
Adult: Place the burger patties into the oven and bake for 25 minutes. Add the whole wheat buns to the oven and bake 5 minutes more, or until the burgers have cooked through.
To complete the Black Bean Burgers with Jicama Slaw:

Yukon Gold potatoes are mashed with cream cheese, parsley and chives for herbal filling to stuff baked tomatoes. Kids will have fun scooping out tomatoes and stuffing them with the whipped potato stuffing. This recipe comes to us from Andrea of Andrea’s Recipes.

Ages 8-11

Serves 6

  • 1 pound Yukon Gold potatoes, peeled and cut into chunks
  • 2 ounces nonfat cream cheese
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup nonfat milk
  • 2 tablespoons parsley, chopped
  • 2 tablespoons chives, chopped
  • 1/4 teaspoon salt
  • 1/8 black pepper
  • 6 6 ounce ripe tomatoes with flat bottoms

Adult: Place the potato chunks into a large pot. Fill the pot with enough water to cover the potatoes by more an inch and place it over high heat. Bring to a boil and reduce heat to medium, taking care to maintain a medium boil. Cook the potatoes for about 10-12 minutes, or until the potato chunks are tender when pierced with a fork.

Together: Add the cream cheese and butter to the pot, stirring with a wooden spoon to ensure that the ingredients are evenly distributed. Pour in the milk while beating with a hand mixer, until the potatoes are smooth and creamy. Stir the parsley and chives into the mashed potatoes and season with the salt and pepper.

Adult: Preheat your oven’s broiler. Carefully cut a wide circle around the stem of each tomato and remove the stem and core.

Kid: Use a melon baller or small spoon to scoop out the tomato’s seeds and juice, leaving an opening about 2 inches wide at the top of each tomato.

Together: Divide the mashed potatoes among the 6 tomatoes, filling each a little past the top.

Adult: Place the tomatoes on a foil covered baking sheet and broil for 5-6 minutes, or until the potato stuffing is lightly browned and the tomatoes are slightly softened. Allow to cool for 2-3 minutes and enjoy!
