Countdown To a Frugal St. Patrick's Day: Day Three


             Corned Beef and Cabbage Rolls
 
This looks delicious... I can't wait to try it!!



Ingredients:
  • 1 1/2 quarts oil
  • 2 cups coleslaw
  • 1 tablespoon water
  • 1/2 cup thinly sliced onion
  • 4 ounces chopped corned beef
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup diced cooked potatoes
  • 1 cup Monterey Jack cheese, divided
  • 8 (7 inch square) egg roll wrappers
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water

Directions:
  1. In a large skillet, over medium high heat, heat oil to 375 degrees F.
  2. In a medium skillet over medium heat, saute coleslaw, water and onions until tender. Add the chopped corned beef, pepper, and salt and saute 1-2 minutes. Transfer to a large bowl and mix in cooked potatoes.
  3. In a small bowl, combine flour and 2 tablespoons water in a bowl until it forms a paste.
  4. To assemble egg rolls, lay one egg roll wrapper with the corner pointed toward you. Place 1/3 cup of the cabbage mixture on egg roll wrapper and sprinkle with 2 tablespoons of cheese. Fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
  5. Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Serve with thousand Island dressing.

Tasty Thursday: Irish Style Dirt Cake

  • 2 (6 ounce) cartons Yoplait French Vanilla Yogurt
  • 1 (1 ounce) packet sugar-free white chocolate pudding
  • 1/2 cup (or a 100 ml bottle) Bailey's Irish Cream liqueur (if making this family style, just use 1/4 cup of milk instead)
  • 8 ounces extra-creamy whipped topping
  • 1 cup white chocolate chips, melted
  • 1 1/2 cups Lucky Charms

Directions

  1. In a stand mixer, beat together the yogurt, pudding mix, and Irish Cream until whippy.
  2. Add approximately 6 ounces of the whipped topping (you just need to save about 1 cup of the whipped topping to finish off the tops of your dirt cakes) and beat until the mixture is smooth.
  3. In a small bowl, melt the white chocolate chips in the microwave in 30-second bursts, until melted.
  4. With your electric mixer turned on, slowly pour the melted chocolate chips into your creamy mixture until well-beaten. Tint with green food coloring, if desired.
  5. Spoon several tablespoons of the mixture into mini trifle cups, top with Lucky Charms, more of the Irish Cream mixture, a thin layer of whipped topping, then sprinkle with Lucky Charms to finish it all off.
  6. Serve immediately for best results! Enjoy!

Countdown to A Frugal Saint Patrick's Day: Day One

Every year our family Celebrates

The Luck of Irish with some family traditions..

 
We Build Leprechaun traps, he always leaves gold & lucky charms,
 
and have a Irish Dinner.. Here is how to build your own,
 
along with some photos of our fun traditions over the year.

Leprechaun traps.. how to make your own..

 

 
 
 


You can make a contraption with a net, boxes, a clean can, or anything else you can think of such as paper towel rolls, empty containers, tin foil, paper, string or yarn, sandwich bags, etc; or, how about using an old shoe since they are said to be cobblers. You have to be very creative to catch a Leprechaun.

Here are a few more tips and suggestions to help you get started:


•Rainbows are good to use on or around your trap.
•Color your trap green and decorate it with green items (stickers, glitter, etc)
•Leprechauns are also attracted to four leaf clovers.
•Leprechauns like Lucky Charms cereal!
•Make sure your trap is disguised well - make sure it blends into its surroundings.
•No two traps should be alike or the Leprechaun will get suspicious and leave.
•A Leprechaun will leave a trail of gold and/or green glitter, so watch for it!
Now, you should be ready to build your trap. I can't guarantee you will catch one of these little creatures, but you will sure have fun trying

Happy St. Patrick's Day!!

Aidan informed me he hates corned beef and cabbage, so I am trying a different recipe this year... probably make potato cakes too!

Irish Shepherds Pie

Ingredients
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, diced
  • 2 pounds lean ground lamb
  • 1/3 cup all-purpose flour
  • salt and ground black pepper to taste
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon paprika
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon ketchup
  • 3 cloves garlic, minced
  • 2 1/2 cups water, or as needed
  • 1 (12 ounce) package frozen peas and carrots, thawed
  • 2 1/2 pounds Yukon Gold potatoes, peeled and halved
  • 1 tablespoon butter
  • 1/4 cup cream cheese
  • 1/4 pound Irish cheese (such as Dubliner®), shredded
  • salt and ground black pepper to taste
  • 1 egg yolk
  • 2 tablespoons milk

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place olive oil and butter in Dutch oven over medium heat. Stir in onion and ground lamb; brown the meat, breaking it up into small crumbles as it cooks, about 10 minutes.
  3. Stir in flour until incorporated, then mix in salt, black pepper, rosemary, paprika, cinnamon, ketchup, and garlic; cook and stir until garlic is fragrant, 2 to 3 minutes.
  4. Stir in water and scrape up any brown bits from the bottom of the Dutch oven. Reduce heat to medium-low and bring mixture to a simmer; cook and stir until thick, about 5-6 minutes.
  5. Remove lamb mixture from heat and stir in peas and carrots until combined.
  6. Spread lamb mixture into the bottom of a 9x13-inch baking dish and set aside.
  7. Place potatoes into a large pan of salted water. Bring to a boil, reduce heat to medium, and cook until tender, about 15 minutes. Drain well and return potatoes to pan.
  8. Mash butter, cayenne pepper, cream cheese, and Irish cheese into the potatoes. Mash until combined and potatoes are smooth. Season to taste with salt and black pepper.
  9. Whisk together egg yolk and milk in a small bowl; stir into the mashed potato mixture.
  10. Top the lamb mixture in the baking dish with the mashed potatoes and spread evenly to cover.
  11. Bake in the preheated oven until the top is golden brown and sauce is bubbling up around the edges, 25 to 30 minutes.

How I make Corned Beef and Cabbage...I love making a big deal about St. Patricks day for my kids..

One of those crazy leprechaun's always makes a mess and leaves them some lucky charms or gold... And that night for dinner we have this, some soda bread, green koolaid, and this year I am making green cake balls too. I wanted and have everything to make lamb stew but my daughter says that would awful and evil to eat a lamb...so...... I saving it till she doesn't know mommy made lamb.



Ingredients
4 large carrots, peeled and cut into matchstick pieces
10 baby red potatoes, quartered
1 onion, peeled and cut into bite-sized pieces
4 cups water
1 (4 pound) corned beef brisket with spice packet
6 ounces beer
1/2 head cabbage, coarsely chopped
Directions
1.Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High.
2.Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.

Irish Soda Brea in Skillet for St Paddy's Day :)

Ingredients
1 cup milk
1 teaspoon vinegar
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
Directions
1.Preheat the oven to 400 degrees F (200 degrees C). In a cup or small bowl, stir together the milk and vinegar. Let stand 10 minutes, or until curdled.
2.In a medium bowl, stir together the flour, salt and baking soda. Stir in the curdled milk mixture until smooth. Scrape the dough out of the bowl onto a floured surface, and shape into a disc. Place the disc into a cast iron skillet.
3.Bake for 15 minutes in the preheated oven, or until the crust feels firm to the touch.
