Monday Menu Planning & Weekly Update: 9/2/13



I can't believe it's September already!!


So I am trying to eat Healthier this week...

Here is our Menu Plan for the week...

Monday ~  Caramelized Chicken Legs

Tuesday~Taco Night

Wednesday ~  Low Fat Italian Baked Chicken, over brown rice, with veggies


Friday ~Blackened Salmon with asparagus, and sweet potatoes 

Saturday ~ Lunch with my mom & Football game at dinner time

Sunday~ French Dips And loaded tator skins

Last Week we had football ( Of course), attended the SHHS Opening game, and celebrated 

Avery turning 16 years old!!!

Well it's another week here in Eastern Tennessee. 

This past week we had football practice, and scrimmage, cheerleading,

various appointments, orchestra picnic, sleepover, and  a Bake Sale ..

Well our first week of School was a crazy one...




 We started Cheerleading, and tumbling.

Monday Menu Plan & Weekly Update


Last Week about did me in!! 

 Last week we had Camp Amp, 

Construction  Engineer Camp, Open House for School, Cheerleading Meeting,

Football Practice,Mommy & Grace day, Operation School Bus, and kick off Sunday at Church.. 
Hard to Believe August is here!!







Now that football is here.. expect to see LOTS of crockpot recipes! 





Wednesday~ Meatloaf, Mashed tators, green beans

Thursday~Fiesta Night ( Tacos, beans & Rice)

Friday~ I will be out of town

Saturday~ I will be out of town

Sunday~  Brinner ( breakfast for dinner)

Old Fashioned Chicken Casserole



Ingredients (6-12)
  • 2 c diced or shredded cooked chicken
  • 3/4 c mayonnaise
  • 1 c diced celery (optional)
  • 1 can cream of chicken soup
  • 1 c minute rice
  • 1 c chicken broth or water
  • 1 tsp grated onion (minced onion flakes)
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1 c cornflakes
  • 2 T melted butter
  • 1/2 c slivered almonds (optional)
  • To double: Double everything except use 3 cups of rice and 3 cups of chicken broth. Don't double the mayo -- use 3/4 cup to 1 cup. I also use all the meat from a small rotisserie chicken which winds up being about 4 cups.
Instructions
Preheat oven to 375 degrees F.
Mix chicken, mayo, celery, soup, rice, broth/water, onion flakes, lemon juice and salt in a large bowl. Pour into a greased 8 x 8 (or 9 x 9) casserole pan, or a 9 x 13 casserole pan if doubling.
Bake uncovered for 40 minutes.
Remove the casserole from the oven and cover with cornflakes, melted butter and almonds, if using. Bake an additional 5 minutes.

and Avery went for a visit with Nana.


Oh And We celebrated this sexy hubby of mine's birthday..


He hit a milestone this year ;)

This is our last week of Summer Because School starts

I am officially a Aunt  thanks to the arrival of my sister's baby..

We have a visit from Nana this week,




and Grace left for her first away from home camp. 

She was excited... Can you tell?

Avery is gone for a visit with Nana.. 

So Aidan is a only child this week, and he starts football! 

So I am only cooking for 3 this week!! Here is this week's plan..


Monday-~ Fried Fish, with fried green tomatoes, corn, mac n cheese

Tuesday~ Chicken in Basil Cream Sauce

Wednesday~  Quesadilla's, rice and beans

ThursdayRigatoni Pasta Pie

Friday~ Fried Chicken, mashed potatoes, and green beans, corn bread

Saturday~ Slow Cooked Buffalo Chicken

Meal Plan Monday & Weekly update: 7/15/13





This past week was a pretty good one. We went to a wedding this weekend. 

It was great fun!




We will be getting Ms. Grace ready for Doe River this week, she heads to camp on Sunday.


Here is our Dinner plan for the week.

Monday: Smoked Ribs, corn on the cob, pasta salad, smoked tators

Tuesday:  Taco Tuesday! ( Spanish Rice & Beans too)

Wednesday:  Fried Chicken, Mashed Tators, green beans and corn

Thursday: Soup Beans, Cornbread, cucumbers, and tomatoes..

Friday: Hamburger, Hotdogs, On the Grill

Saturday: Shrimp Scampi

Sunday: Baked Ziti

Meal Plan Monday & Weekly Update!



It has been a crazy week ... I feel like I am finally getting into a Summer Schedule... And guess what School is less then a month away from starting again!!  I have been in a Southern Cooking mood lately!  This past week we had violin, Dr's Appts, and more... One of my good friends Angel is getting married and I help host a bridal shower for her last Sunday...



You might know her from Artistic Icing


We had a Southern Shower.. Guests had to make a gift from Junk and

turn into treasure... Wanna See my Favorite gift?

Weekly Update & Monday Menu Plan: 6/10/13

This weekend I spent lots of time down at the Blue Plum...

 My oldest is still away at camp, and my daughter was gone this weekend... So Aidan was a only child... he wasn't sure what to do I think.  the Ice Cream truck finally came back yesterday... the kids grabbed the ice cream jar and ran.






 Yesterday I spent time making salsa, and a few other goodies for the week.





I hope to blog about this yummy cake I made soon...
